  I think they normally would be sheeted in, provided you're not running and the wind is fast enough to make you go, but not fast enough to capsize you.

  Monohull sailors moving over to multis will often let the boom out more than they need to because they're used to going between four and eight knots, and they need that angle to get an efficient foil.  But sailing near the wind speed moves the apparent wind way forward, and requires sheeting closer to sailing upwind, even when you're on a beam reach.

  In very low wind, though, you'd probably want to look at the windex and consider either loosening the sheets or the outhauls (if they exist).  In big winds, you'd obviously want to loosen the sheets and/or reef.

Rob has discussed the schooner rig in some detail earlier on but it
seems reasonable to cleat one sheet and play with the other for just
hacking along but adjustments of both sails would be needed to get
the max benefit,
