I agree strongly on the ww bow. A spray rail might help as might a wave piercing addition such as on http://www.marlinbroadbill.com.au/htm/range/off_cat_600.htm. as they are supposed to significantly reduce the impact in slop and provides a step to get onto the ww bow and the ww hull has similar function to the bows of the power cats but angled down about 5-10 degrees more. This would be a fair bit of extra work though. Your seat idea makes a lot of sense for keeping water out. A forward facing coaming is what a lot of the traditional canoes have in PNG. In my drawings I have a flare of 200mm just above the static waterline rising at 1:15 to the bow, tapering in to nothing from the crossbeam to the bow. This 1:15 is the max. sailing angle of the boat. This is to act as a spray rail. You could fit a sponson to the ww side of the ww hull similar to deflect a lot of the water

Can you explain why the canting makes such a difference. It would be nice to have that extra security in case of a knockdown.
