Definitely remember you.  Welcome back!  Glad you have been spending your time doing interesting stuff.  

Couple of comments:

Stitch and glue hull shapes are not as quick to build as flat or curved bottoms on rockerless hulls.  Building the rest of the boat in ply will be heavier and slower than using thicker, foam cored panels.  Price difference will depend on materials costs.  Check out the build pictures and the cost and hours spreadsheet of Solitarry 2 in the Photos and Files sections for comparison.  Note that I have not used any build frames or other alignment tools so far.  Even so, I would build the boat, then buy the trailer.

Do you want to sleep them inside or in a tent on the deck?  You will need twice as much boat for the former.

Stayed alloy is cheaper than built carbon, but I would look for old windsurfing masts and extend and beef them up.  Maybe a schooner instead of an Easy Rig, particularly if you are not having rudders.   Don't forget the compression load on the mast step with a stayed mast.
