Actually servopendulum seems like the correct term. See the principle explained here: http://www.selfsteer.com/products/monitor/servopendulum.php
The idea is that the windvane turns the servopendulum and the force of the waterflow tilts the servopendulum that is connected to the rudder and turns the boat back to its course.
