No problem at all.  El was originally an overpowered rocketship for two crew.  We tried it with a 2.5m beam and it was a bit tippy.  Then added a seat out the side made of 2 x 4's, which worked really well until it broke.  Since then I have removed one of the masts, so it would be no problem at 2.5


A camper version at 2.5 wide would have heaps of stability as long as the rig was not too high.  This might mean that low wind speed was not wonderful.  Maybe a schooner rig.

Another possibility is the folding system on Expeditionarry, the harry I designed for the Wooden Boat Design competition.  This has a very simple 2 pins per beam system.   Attached is a GA and some info on it.  Other drawings are on the harryproa chat group in Wooden Boat design competition folder in the Files section.  Construction of one of these will be starting at Xmas.

Would there be any mileage in using the WTW concept in order to have a reduced total width?
For example, your Elementary you used as a pacific proa. The addition of the camper ww hull would add to the righting leverage and would permit shorter cross beams.
The reason I ask is that the ability to have a 2.5m width helps enormously with launching and with using marinas. I have been looking at all sorts of folding systems as marinas in the UK are mostly multihull unfriendly which is why I had an F27 previously.
