Aesthetics are a personal matter but different markets are driven by different aesthetic appeal. So aesthetic compromises are more important than naval architects are happy with.

The Wantoo folding system is particularly well suited for higher cabins as its main pivot with the ww hull is vertical.
I am with you to design in at the outset higher cabins. It is all fine to strive for low windage but it makes little sense to fight the practice in a large majority of boats to add almost permanent bimini's, screens, hoods and the like for more protection than originally designed for. A higher cabin designed at the outset will be aerodynamically more efficient than any after sale add-on. 
By the way, one of the requirements in the briefs for the Wantoo was Nol's partner's wish for a double bunk or else.... ;-) The ww hull of the German El offers wider bunks and I have the impression that the seat backs could hold the Wantoo folding system pivots.
