The pedal boat is not squatting at 8knts.  It has net lift.  The splashing you have observed at the back is the operation of the dipping rudder.  It comes and goes as I apply steering input.  


Your observations on the pedal boat and proa are far from what is actually occurring.

If anything I saw your stern squatting more at the higher speeds and concluded it is due to the turbulence at the stern, maybe surface interference with the rudder, that could be the ventilation I saw too.  Mount your rudder underneath and you will lose a lot of drag, because you are losing one wingtip vortices.
