Yeah, I'm thinking one head and a "closet" in lieu of the 2nd head.
Most cruisers are a couple with very occasional guests. Seems perfect to me. Ample deck and saloon space for guests on day sails or dock parties, but if you're sleeping on my boat I wouldnt mind sharing a head for the relatively short duration of your visit. And do we really want many guests to stay long enough that they need more storage?
