Composting heads will be used.  A single stateroom/toilet is a better layout for a single family boat, but if regular visitors include wives, then almost certainly 2 will be better received.     The toilet in the lee hull will be handy on wet nights.  Plenty of options, just got to decide which suits each person best.

More than one head is kinda wasteful in my opinion. the space released would allow for a stateroom and one cabin. The head might be better as a 2 way so both sides can have access, but this does impact on how it is laid out. I haven't tried them but I hear that composing toilets are quite good.
