You could do that, but the bigger the boat gets the less manageable it is. Off the beach boats no problem

For larger boats again it means being on hard standing and sorting the hulls out on the trailer unless you are craning a boat into the water. I would have a few concerns about doing it alone with a larger boat too.

The beauty of folding/unfolding is that you can launch the boat off the trailer and unfold it in the calm conditions near the ramp on your own. The limitations to folding is probably the limited maximum width to which unfolding will work, and its likely to be a heavier system too.

I think what Rob describes as the parallelogram made to work for boats around 12 ft beam OA or a fraction less. Thats likely more than enough boat length to manage on a trailer if you want to avoid special towing arrangements. The only question is which part of the boat moves over or under the other, because in smaller sizes I suspect the windward hull is going to be easier to move.
