Yes twist is important and it will always be a compromise with a simple wing and the entire wing will never be able to generate maximum lift. And it is 'apparent' wind speed increases not 'true'.

A wing though is way superior to a sail in dealing with twist not the least of which is because of the triangular shape of the sails.

Yes a wing is going to raise the CoE, which is bad especially for a thin hulled Proa, but at the same time it has less drag than a sail and less total forces acting on it so the heeling moment is going to be comparable.  And with a wing it is almost completely controllable, unlike with a gust of wind that knocks a sailboat with a sail down.
