The stem still has a flat portion.  At deck level it is maybe 110 wide.  Before it was modified it used to be about 300 wide and the spume was much higher:

This is at 14kts.   

The stem will be taken to a small radius for its full height.  It will end up almost vertical so the attached sheet will be even thinner.  

Power cats usually have spray rails designed to detach the sheet flow up the sides.  It is something that has been thought about but there is not much benefit on the proa.  The spume is never an issue on deck as it all goes to the lee side.  The windward hull rides high enough that the flow rarely stays attached up the sides.
