Cool looking boat.  And I like your design method!
Try heating the resin in the brush or container that you used.  No more than too hot to touch for 30 minutes or so.  If it cures, the job will, eventually.   
See if you can get faster hardener, or heat the job or the workspace.  Be wary about heating timber after the epoxy is applied.  The air in it expands and you end up with a bubbly surface.    System Three and WEST both have suggestions in their manuals for cold weather epoxying.
