The core is discontinuous, the inner skin is not.  The bulkhead sits on the inner skin, which sits on the reinforced outer skin.  The bulkhead is bonded to the edge of the core, which has the inner skin over it.  It is a hard spot, but a very well reinforced one. 
For light skinned laminates or highly loaded bulkheads, the fillets are included on the foam, so the core is continuous. 

Is the Schooner rig about balance in both directions ?
Yes.  Plus space in the lee hull and more area for a given mast length.

What might the cost/benefit difference be between Schooner and Balestron Sloop rig be ?
Balestron is a little cheaper and lighter for the same sail area.   Pretty similar performance, ballestron better broad reaching (deep enough for aft schooner sail to blanket front sail), about the same reaching (per unit of sail area), not as good upwind (forestay sag).   Not a huge amount in any of it.
