One of the niftiest thing I remember was a chart plotting table underneath the centre cockpit.
Beneath the cockpit grating was translucent plastic, so it passed all the light over the table below.
It was on an innovative boat called Luna, with 2 masts, 2 headsails and no mains.

An almost common one you see around now in caravans is an open bottom to a dishrack situated over a drainer first created by Nautor Swan Yachts
no more drying dishes, put the plates in there wet and they air dry and drain

Plexiglass doors to cupboards so that you can see whats inside and you dont have to hunt for things.
And best of all, no more woodwork finishing skills!
