If 5mph is your target average speed I can give you a solar powered concept that has infinite range and much more practical as a cruising boat.

It made it to Hawaii in 34 days including two weeks of the doldrums so sailing 2400 miles in 20 days or 120 miles per day for a 5 mph average speed. Almost typical displacement hull speed and the boat design looks really draggy and not very stable at all. A very good test of the concept.
