I had the exact same reflection and Farrier and Cat2Fold where the ones I was looking at for a long time ... Actually Hughes trimaran for the easier build method. But then again, these are cramped spaces and submarine like. If it is impossible to sit on a berth, then not for me ... there are other things to do in a bed than sleep :-)

That's why a Harry "half cat" like Rob said make all the sense. Like Cat, it can have open inside space, standing headroom almost everywhere, good size head and shower, big berth that can be sat on. But most importantly, light, safe and trailerable (container size folded) without having to dismantle. 
So 40F is already too big for me ... Replacing bimini by a hard top would make it almost semi-trailer height on the road, not good for casual trailering, and no more possible to ship in container.

I would be very interested that you would also be considering The Bug in the comparaison ? It is still a proa HP style and look like it has everything you want ? 
Closed bridgedeck, roomy, open feeling with lots of windows, fold without dismantling to 2.3m wide x 2.3m high, 2.05 m high inside in the middle, 1.9m high average in the shower and cabin "walk in" section.
As for windage, going forward, it cannot get much better than this. For sidewind, look to be pretty similar (total cabin height a bit higher but The Bug is much shorter at 22 ft).

Maximum displacement weight will be 2000kg, 800kg sailing weight so a payload of 1200kg.
