You have not provided the beam at the midpoint of each block.  I need that to get the waterplane area.  With no flare the waterplane area is essentially constant for each block until a portion of the hull is submerged.

I would go with full displacement (2000kg), the lw hull will support about 700 kg of weight at that displacement.
The righting moment is about 6 ton*m.
For the height of the CoE, I am not sure but I am planning to go for 50 sqm of total sail and 12 m masts (so 25 sqm per masts), with a root of 3m look like a CoE around 6.5m above water

So 10 sections of 750mm from stem to middle, x value for the middle of the block.
x=375 mm   v=0.046 m3
x=1125 mm   v=0.123 m3

x=2625 mm   v=0.220 m3
x=3375 mm   v=0.244 m3
