As long as the bearing surface is large enough, and the mast stiff enough, plastic is fine in the situation where the boom turns the mast.  If a spanner or wind pressure on the sail alone is turning the mast, then at some size, depending on how often you want to adjust it and the righting moment, rollers are required.
