Brian Charrette has a Cat2Fold and often trials it down Mexico way. Apparently it is seriously fast. Downwind he has been known to set it wing and wing with a spinnaker in between.

That's funny. I was just surfing forums for anything interesting and saw that you mentioned something about the cat 2 fold. SOmeone saw it in Catalina Harbour.
And I was also just earlier looking at videos I could find of Cat rigged (free standing) boats to try and see how other people managed the raising of mast. And I looked at cat 2 fold. I couldn't really follow exactly what they were doing in the vid, but it took a while and involved some advanced looking attachments .

SO I guess this is something like the harriette rudder hinge? WIth 3 sides of carbon, with one side open.
For the mast you could add extra support there while sailing and make it fairly solid and strong.
