There are 3 sorts of carbon.  Plain or twill weave which looks cool,  is expensive to buy and to apply and is, as Rick said, mostly decorative.  It loses much of it's stiffness advantage as the fibres are woven/kinked rather than straight.  
Uni/stitched carbon which is cheaper and is used for reinforecement where stiffness is paramount.  The cost of carbon is still coming down due to increased production.  When you allow for the reduction in resin required for the reduced fibre, the cost difference is not large.  
Tow, which is about half the price of uni and is as versatile as Doug says. Tow can replace uni in many applications, but if covering a large area is required, it gets time consuming.  Where it is good is on curves such as the sides of wishbone booms and beams.

The carbon was made into rods in the corners of the triangular beams. Also carbon running down the outside of "shaft" of rudder. Just uni tow, no cloth areas used.
Very economical, tow was very cheap.
You can use it here and there to beef up connection points. And make small parts with.
Wrapped around things it works like straps.
You become handy at using fibres and resin and bog to make things with. Use less other materials like screws, nails wood etc.
Made the chain plates and rudder bearings with glass for previous trimaran. Save on expensive yachting hardware.

This is a good point. Dougs wet layup carbon might not be
any stronger than s glass wet layup, but it is stiffer.

|They are the places where rigidity is important.
Essentially a thick skin on a hollow or low strength
core.
