I was waiting for someone smarter to say it. Has blush ever happened in an infusion? The given vac levels should preclude the necessary humidity, even in humid environs, I would think.

As well, I would think a medium length pot life is acceptable, but I don't know. Assuming we know how long it takes to mix the pot, and how long it it takes to empty, mostly, add some number minutes for a 'oh crap' factor.

I think I might want a huge 'oh crap' factor.
