Gel coat is basically polyester resin with pigment and filler powder (chalk, talc, not sure what these days) so it is brittle and thick compared to reinforced glass.  Consequently, it does not like being bent.  

Peel ply does not remove resin from the laminate.  Under vac pressure it makes no difference to the resin in the laminate.  Hand laid, it acts to flood the weave with resin, leaving a smooth(ish) surface.  There is not much in it, but leaving the peel ply off and filling it with bog will be lighter, albeit a lot more work applying it and then sanding it.

Sanding a shiny moulded surface that has been infused is challenging.  The resin sands easier once you are through the surface as the fibres are right there.  A lot of care is required.  Far easier to use peel ply and simply tear it off, then apply undercoat.

So if I understand it, peel ply on the inside surface of the mold is not integral to intelligent infusion, it is a finishing choice. Rob's default finish as I understand it is quick and cheerful, rather than high gloss. Peel ply on the inside does have some advantages for places where there will be secondary bonding, and potentially for slightly better fiberglass/resin ratio (not sure why this is true).



My personal choice would be smooth waxed mold finish, then paint as I like the look, but I'm sure you could do gelcoat as well. However, I think gelcoat might be problematic on any of the folded flat panels, as gelcoat is much stiffer/more brittle than fiberglass, and might not bend happily.
