  Would Bucket list do this, perhaps with that pram hood? 

  Another option would be the entry for the woodenboat competition, which sounds like what you're describing.

  Both should be able to be set up on a beach with two reasonably fit adults.  I don't know how BL is intended to be assembled, but I'm pretty sure I remember the woodenboat entry being designed with schooner masts that you could fit into the leeward hull when it's on its side on the beach, after which you'd right the hull and the masts by pulling down on the beams before securing them to the windward hull.

  That design was almost enough to make me take the leap, but my family didn't go for the pram hood, pipe berths, and lack of a "proper" head.

But very little accomod.
And short masts.

I guess folding could do too.
