1) Depends on the laminate and the location.  Between the beams needs more than the ends.  But generally speaking, allow 40$ of the weight of the glass, plus an amount to wet out the foam, which also varies by weight and individual sheets.
2) Depends on the loads, ie the weight of the windward hull (polynesian terms for non polynesian boats is a bit arrogant, in my opinion), it's load and half the weight of the beams etc.  

All this information is in the plans.
