It is usually warm in the summer in Scandinavia and we mostly sail during the warm season. So not much of an issue. Condensation and mosquitoes are bigger issues. 

Our yacht club's former commodore built extra insulation for the trip to Greenland. Probably needed since they sailed to arctic ice.

The Swedish boat builder/sailor/adventurer Sven Yrvind  https://en.wikipedia.org/wiki/Sven_Yrvind designed a boat with if my memory is correct about 10 cm thick foam walls and he made sure to have the window frames catch most of the condensation which I guess he handled with some kind of gutter as planned.
