I suggest, looking at Steinar's build, 7' roof and single car width is fine.

The only "nice to have", as discussed, is length, I think.
And that's only for ~2 infusions and final assembly.

A point that I have not seen made is that, likely, you can make all the parts, which will, I expect, be significantly smaller that the lw hull. Then, haul them to another location and do final assembly, perhaps, nearer to the water.
