The schooner/una arguments and 1 vs 2 piece masts are all correct, and well explained.  The light air/tall rig vs strong air/low rig is a challenge and will require reefing.  Whether that includes the mast as well as the sail is a function of how much complexity you can put up with.  On a 40' cruiser, I doubt it is worth it. In fact, I don't think it is worth it on the 24m, except for racing or use in seriously windy places.   

How tall

If the mast(s) are built right, they will not break, except if you hit a bridge or perhaps in a capsize. In the latter case, the boat will be upside down, so a spare is not much help.  Being able to remove the masts, for the reasons given is relevant.  A gin pole which doubled as an aerial/nav lights/radar/etc mount would be one solution, but probably too much messing about to remove and disconnect everything.  A 2 part gin pole/sun shade support is a great idea.  

One part vs 2 part masts depends on the track situation and trailering requirements.   There is definitely a top and a bottom, although with the square sail held on by hoops they can maybe be untapered, so a single mould can be used for both.  Making the mould is easy, so this is not a big deal.
